Recipe Exchange: Appetizers
8oz- Crumbled Roquefort or Blue Cheese
¼ cup- Sour Cream
2-lg Ripe Avocadoes
¼ cup- Sliced pickled jalapenos peppers
2-Green Onions sliced thin
½ tsp- Fresh limejuice
Crumble the cheese and stir into the sour cream. Add avocadoes and mash with a fork. Rough chop jalapenos and add to mixture. Stir in green onions and limejuice.
Chill and serve with tortillas chips.
Fred’s Shrimp Ceviche Cocktail
½ cup Chopped Onion
¾ cups Fresh Lime Juice (can use the bottled variety)
1-lb Medium Shrimp
1-cup chopped, peeled, seeded cucumber
½ cup Ketchup
1/3 cup Chopped fresh cilantro
2-tbs Mexican hot sauce (such as Tamazula-look in Mexican section)
1-tbl Olive oil
¼ tsp Salt
Place chopped onion in a colander and rinse with cold water. Drain and set aside.
Bring 6 cups water and ¼ cup limejuice to a boil in a Dutch oven. Add shrimp, cook 3 minutes or until done. Drain and rinse with cold water; peal shrimp. Combine shrimp and ½ cup limejuice in a large bowl; cover and chill for one hour. Stir onion, cucumber, and remaining ingredients. Serve in chilled martini glass with shrimp divided evenly and glass topped with sauce. Sprinkle fresh chopped parsley on top prior to serving
